Tuna Salad Surprise

Ingredients:
5 oz. Canned Tuna in Water (If in oil, skip olive oil)
1 Tbsp Olive Oil
1 Tomato, Diced
1/4 Cup Green Onions, Diced
2 Tbsp Parsley and/or Cilantro 
2 Tbsp Lemon Juice
Salt and Pepper to Taste
Raw jalapeno (optional)

Directions:
1. Mix first four ingredients in a bowl and season to taste.
2. Add jalapeno (optional).
