Ingredients:
Cooking Spray
1 1/2 LBS Russet potatoes
1 Tbsp Olive Oil
2 Tbsp Chopped Rosemary
1/2 Tsp Salt
1/2 Tsp Pepper
Directions:
1. Preheat oven to 425 Degrees.
2. Spray a large baking sheet with cooking spray.
3. Scrub potatoes and then place the whole potato into a microwave-safe dish. Cover dish and microwave on HIGH for 3-4 minutes.
4. Carefully remove cover from dish and cut each potato in 8 wedges and then place into a large bowl.
5. Toss potatoes with olive oil and then place in a single layer onto a baking dish and bake for 10 minutes.
6. Spray potatoes with cooking spray (canola or olive oil works best) and turn the potatoes over and spray again. Bake for another 10 minutes or until potatoes are golden brown.
7. Mix together rosemary, salt and pepper in a small bowl and mash with the back of a spoon. Sprinkle over cooked potatoes and toss to coat.
