Mozzarella and Egg Breakfast Sandwich

Ingredients:
1 Large Egg
2 Egg Whites
1 Tbsp Low-Fat Milk
Nonstick Cooking Spray
2 Tbsp Chopped Roasted Bell Pepper
2 Tbsp Chopped Fresh Basil
Ground Black Pepper (optional)
1 Slice Part-Skim Mozzarella Cheese (~1/2 ounce)
1 Whole Wheat English Muffin, Split, Toasted

Directions:
1. Whisk together egg, egg whites, and milk in a medium bowl.
2. Spray a small nonstick skillet with cooking spray and heat the eggs/milk mixture over medium-low heat, stirring occasionally, for about 2-3 minutes.
3. Add in pepper, basil, and pepper (optional). Continue cooking for 1-2 minutes or until mixture is set.
4. Place cheese on one half of the muffin.
5. Add egg mixture to second muffin half.
