Vegetable Frittata

Serving Size: 1/2 frittata
Preparation Time: 15-20 Minutes

Ingredients: 
6 Eggs, Beaten
1 Cup Fresh Spinach, Torn
1 Tsp Garlic, Crushed
2 Medium Plum Tomatoes, Chopped
1/4 Cup Onion, Chopped
1 Red Bell Pepper, Chopped
2 Tbsp Fresh Basil, Chopped
1/2 Cup Swiss or Soy Cheese, Shredded (Low Fat)
1 oz. Parmesean or Soy Cheese, grated
Cooking Spray

Directions:
1. Preheat oven to 450 degrees.
2. Spray an 8-Inch Pie Pan or Baking Dish with Cooking Spray.
3. Beat eggs in a bowl, then mix in all ingredients and pour into pan. Cook for 12-15 minutes or until the eggs are firm.
4. Cut into 2 servings and enjoy!
